I altered the traditional Jiffy corn muffin mix to include corn and make it more moist. This is my created recipe.
You will need:
1 pkg. Jiffy Corn muffin mix
1/4 c. sour cream
1 can corn, do not drain
Blend ingredients until smooth. Let rest for 3-4 minutes while preheating oven to 400 degrees. Fill muffin tins or greased pan with batter. Bake 15-20 minutes until golden brown.
