Years ago, my aunt Jo made this recipe at a family gathering. I loved it then and it has become a favorite side dish to make and share with others. I add cayenne pepper for variety sometimes.
You will need:
1 can cream corn
1 can kernel corn, drained
1 box jiffy corn bread mix
1 8oz. toasted ion chip dip, Mexican chip dip or sour cream
1/2 c. butter, melted
Mix the above ingredients together by combining the wet ingredients and then adding the dry ingredients. Bake for 45-60 minutes at 350 degrees until the top is medium brown. Check on it and be careful to cook it long enough or the middle may not be fully baked. If you are cooking this in an oven with other items at the same time, add more time to the cooking period. Watch for a medium brown crust on top to form as an indicator of doneness. Let sit to cool off and set up, then enjoy with those you love.
