Mark's favorite main dish is chicken, so I adapted the chicken salsa recipe to create a 'white' dish with pasta instead. It's a great way to use inexpensive frozen chicken breasts in a large bag from the grocer's freezer section, too.
Ingredients:
6 fresh chicken breasts cut into bite sized chunks
(or use frozen chicken and extend cooking time one hour)
1 can of cream a celery soup
(or substitue with sour cream and 2 tsp. celery salt)
1 large bag of frozen cauliflower
1 bag of frozen lima beans
1 bag of frozen diced carrots (optional)
1 bag of egg noodles
4-8oz. cream cheese
1. Combine the first two ingredients in crockpot and cook on high for 2 hours.
2. Then, add the cauliflower, lima beans, and noodles and continue cooking for 2 more hours (or 3 hours if the chicken was frozen). There is no need to pre-cook the noodles.
3. At the end of cooking, mix in cream cheese to make it creamier.
4. Serve as you would a casserole and enjoy with your family!
