Pumpkin Muffins

Skillscale: 1 Several Davy moms recommended this recipe to me and I had to try it. I found a carrot cake boxed cake I liked the second time (without carrot shreds and raisins) and it was great. 1 8oz can pumpkin (Libby's) 1 box carrot cake mix Mix above two ingredients together. Although mix is dense with stiff peaks, you may add a dash of water if needed to thin out consistency a bit. Place into muffin tins and bake until center of the muffin is baked all the way through (discretely insert a toothpick and remove; if it is clean, then the muffins are done). Bake approximately 25 minutes for 18 regular muffins or 45 minutes for 6 jumbo muffins. Enjoy warm or let cool and add cream cheese frosting.
