Salmon or Tuna Patties

Looking for an alternative to traditional burgers? Try this easy seafood alternative on the stove top.

1 can of salmon meat (near the tuna in the grocery store)
1-2 eggs
Sleeve of saltine crackers
Salt and pepper to taste
Chili or cayenne pepper (if desired)
Open a can of salmon meat, drain in a colander and remove the fish bones. Turn on non-stick stove top skillet to medium high heat. Place fish meat in bowl, add one cracked egg and about 8 crushed saltine crackers. Add salt and pepper and chili pepper/cayenne pepper (if desired) to taste. The consistency should be firm enough to form salmon patties. Adjust amount of crackers or egg depending on the amount of meat used. Form patties and add to non-stick stovetop skillet. Heat until a crust is formed on patty then flip to opposite side until browned with a crust.

Top with tartar sauce, ketchup, light mayo or squeeze of lemon depending on your preferred taste. Serve with side vegetable like frozen vegetables or starch like a box of couscous and side salad for a balanced meal. Canned salmon may be replaced with two large cans of tuna.

  1. This is very similar to a recipe for "salmon cakes" that I've been making since I was very young. It's an easy recipe for kids to make (or help make). Instead of a full sleeve of saltine crackers, we've always used 1/2 sleeve-worth of cracker crumbs and a roughly equal measure of oat meal (quick oats). Jeannie doesn't eat any fish, but Aliyah and I simly adore these. They are great chilled, too, so make a handy lunch box item.
